Roast the vegetables for 18-20 minutes until they are tender and show slight charred edges.
While vegetables roast, place the tofu cubes in a bowl and toss with nutritional yeast and garlic powder until evenly coated.
Heat the remaining 0.5 tbsp of olive oil in a large non-stick skillet over medium-high heat.
Add the tofu to the skillet and sear for 2-3 minutes per side until a golden-brown crust forms on all sides.
Drizzle the tamari over the tofu in the pan, tossing quickly for 30 seconds to glaze the cubes.
Divide the roasted vegetable medley and crispy tofu onto plates and serve immediately.
