0.75 cup Brussels sprouts

1 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C).
Trim and halve the Brussels sprouts and slice the carrots into rounds.
Toss the vegetables on a baking sheet with half of the olive oil and a pinch of sea salt and black pepper.
Roast the vegetables for 20-25 minutes, tossing halfway through, until they are tender and caramelized.
While vegetables roast, season the thin chicken breast on both sides with garlic powder, dried oregano, and the remaining salt and pepper.
Heat the remaining olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear for 3-4 minutes per side until golden brown and the internal temperature reaches 165°F.
Warm the pre-cooked brown rice in a small saucepan or microwave.
