Teriyaki Glazed Salmon with Roasted Asparagus
Pan-seared salmon finished with a savory-sweet ginger glaze, served alongside crisp-tender roasted asparagus for a vibrant and nourishing meal.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus
2 tbsp Coconut aminos
1 tsp Toasted sesame oil
1 tsp Fresh ginger
1 clove Garlic
0.5 tsp Sesame seeds
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss them on the baking sheet with half of the toasted sesame oil, sea salt, and black pepper.
Roast the asparagus for 10 to 12 minutes until tender and slightly charred.
While the vegetables roast, whisk together the coconut aminos, grated fresh ginger, and minced garlic in a small bowl.
Season the salmon fillet with the remaining salt and pepper, then sear in a non-stick skillet over medium-high heat for 4 to 5 minutes per side.
Pour the coconut aminos mixture into the skillet during the last 2 minutes of cooking, spooning it over the fish until it thickens into a glossy coating.
Serve the glazed salmon immediately over the roasted asparagus and garnish with sesame seeds.
