Add the diced sweet potatoes to the skillet and cook for 8-10 minutes, stirring occasionally until tender and golden brown.
Add the ground turkey to the skillet, breaking it apart with a wooden spoon as it browns.
Stir in the diced bell peppers and red onions, then season the mixture with sea salt, black pepper, garlic powder, and smoked paprika.
Once the turkey is fully cooked and the vegetables are soft, fold in the baby spinach until it is just wilted.
Use your spoon to create two small wells in the hash and crack one egg into each opening.
Cover the skillet with a lid for 2-3 minutes, or until the egg whites are opaque and the yolks are still soft.
Remove from heat and serve immediately directly from the skillet.
