Deep-Fried Mac & Cheese Balls
Crispy air-fried pasta bites packed with lean ground turkey and sharp cheddar, featuring a satisfyingly crunchy texture in every bite.
INGREDIENTS
4 oz Ground turkey
1 oz Chickpea elbow pasta
0.25 cup Greek yogurt
0.25 oz Sharp cheddar cheese
1 large Egg
1 tbsp Whole wheat panko breadcrumbs
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Avocado oil spray
PREPARATION
Cook the chickpea pasta in boiling water until al dente, then drain and set aside to cool slightly.
In a non-stick skillet, brown the ground turkey over medium heat until fully cooked, breaking it into very small crumbles.
In a large mixing bowl, combine the cooked pasta, ground turkey, Greek yogurt, shredded cheddar, garlic powder, onion powder, sea salt, and black pepper.
Pulse the mixture in a food processor 3-4 times until the ingredients are well-incorporated but still maintain some texture.
Form the mixture into 4-5 tightly packed balls and place them on a plate.
Whisk the egg in a small bowl and place the panko breadcrumbs in another small bowl.
Dip each ball into the egg wash, then roll in the panko breadcrumbs until evenly coated.
Place the balls in an air fryer basket, spray lightly with avocado oil, and cook at 400°F for 10-12 minutes until golden brown and crispy.
