Seared Salmon Fillet with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a velvety cauliflower mash with a side of steamed green beans, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Sockeye Salmon Fillet
2 cups Cauliflower florets
1 cup fresh Green Beans
2 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 tbsp Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Transfer steamed cauliflower to a food processor or blender, add the ghee and a pinch of salt, and process until completely smooth and velvety.
Steam the green beans for 5-6 minutes until they are bright green and crisp-tender, then set aside.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until it reaches your desired level of doneness.
Plate the cauliflower mash first, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice over everything.
