Add the cooked chicken breast and the drained pasta to the skillet with the pancetta, tossing for 1 minute to heat through.
Remove the skillet from the heat entirely to prevent the eggs from scrambling.
Quickly stir in the egg mixture and the baby spinach, adding the reserved pasta water a tablespoon at a time while tossing constantly.
Continue tossing until the spinach is wilted and the sauce has thickened into a creamy, glossy coating over the pasta.
Serve immediately with an extra sprinkle of black pepper if desired.
