Sautéed chicken breast and chickpea pasta tossed in a velvety garlic-herb Greek yogurt sauce with wilted spinach and bursting cherry tomatoes.
INGREDIENTS
4.5 oz Chicken breast
2 oz Chickpea pasta
1 tsp Extra virgin olive oil
2 tbsp Plain Greek yogurt
1 cup Baby spinach
0.5 cup Cherry tomatoes
1 clove Garlic
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Boil the chickpea pasta in salted water according to package directions, reserving two tablespoons of the pasta water before draining.
Season the diced chicken breast with sea salt, black pepper, and dried oregano.
Heat the extra virgin olive oil in a large skillet over medium heat and sauté the chicken until golden and cooked through.
Add the minced garlic and halved cherry tomatoes to the skillet, cooking for two minutes until the tomatoes begin to soften.
Stir in the baby spinach until just wilted, then remove the skillet from the heat.
Whisk the plain Greek yogurt with the reserved pasta water in a small bowl until smooth.
Toss the cooked pasta and the yogurt mixture into the skillet, stirring until every noodle is coated in the velvety sauce.
Garnish with fresh chopped parsley before serving.
