Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over creamy garlic cauliflower mash with tender steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon fillet
1.5 cups Cauliflower florets
1 cup fresh Green Beans
2 tbsp Nonfat Greek Yogurt
1 tsp Avocado Oil
1 clove Garlic, minced
Sea salt and black pepper to taste
Fresh lemon wedge for garnish
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower is steaming, add the green beans to the same steamer basket for the last 5 minutes of cooking until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat avocado oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145 degrees F.
Transfer steamed cauliflower and garlic to a bowl or food processor, add the Greek yogurt, and mash or blend until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side with a fresh squeeze of lemon juice.
