2 cups Fresh Spinach

PREPARATION
Peel and cube the sweet potato, then boil or steam until tender.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt.
Heat half the olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until the skin is crisp.
Remove salmon and add the remaining oil to the pan with minced garlic and spinach.
