1.5 cup Brussels sprouts
1 tbsp Extra virgin olive oil
1 tbsp Lemon juice
1 clove Garlic
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
3 slice Lemon
1 tbsp Fresh parsley
PREPARATION
Preheat your oven to 400°F and line a large sheet pan with parchment paper for easy cleanup.
Trim the woody ends off the Brussels sprouts and slice them in half vertically.
In a small bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, dried oregano, sea salt, and black pepper.
Place the halved Brussels sprouts on one side of the sheet pan and toss them thoroughly with half of the prepared lemon-herb dressing.
Place the salmon fillet on the other side of the pan, brush the top with the remaining dressing, and lay the lemon slices over the fish.
Roast for 15 to 18 minutes until the salmon flakes easily with a fork and the Brussels sprouts are tender and caramelized.
Remove from the oven, garnish with fresh chopped parsley, and serve immediately.
