Pan-Seared Pork Chops with Roasted Asparagus
Pan-seared lean pork chops seasoned with smoky paprika and thyme, served with crisp-tender roasted asparagus and a bright squeeze of fresh lemon.
INGREDIENTS
8 oz Boneless pork loin chops
1 bunch Asparagus
1 tbsp Extra virgin olive oil
0.5 tsp Smoked paprika
0.5 tsp Dried thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
2 cloves Garlic
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F (205°C) and snap the woody ends off the asparagus spears.
Pat the pork chops completely dry with a paper towel and season both sides evenly with sea salt, black pepper, smoked paprika, and dried thyme.
Place the asparagus on a large baking sheet, drizzle with half of the olive oil and the minced garlic, and roast for 12-15 minutes until tender.
While the asparagus is roasting, heat the remaining olive oil in a cast-iron or heavy-bottomed skillet over medium-high heat.
Place the pork chops in the hot skillet and sear for 4 to 5 minutes per side until a golden-brown crust forms and the internal temperature reaches 145°F.
Transfer the pork to a plate to rest for 3 minutes, then serve alongside the roasted asparagus with a fresh squeeze of lemon juice.
