Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared wild salmon served over creamy mashed sweet potatoes and crisp-tender garlic green beans, finished with a bright squeeze of lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Pinch of Sea Salt and Black Pepper
Fresh Lemon Wedge
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
While potatoes boil, heat a non-stick skillet over medium-high heat with half of the olive oil.
Season the salmon fillet with sea salt and pepper, then sear for 4-5 minutes per side until the skin is crisp and the flesh is opaque.
In a separate small skillet, heat the remaining olive oil and sauté the green beans with minced garlic for 5-6 minutes until crisp-tender.
Drain the sweet potatoes and mash them thoroughly, adding a splash of hot water or a tiny bit of almond milk if needed for creaminess.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic green beans on the side with a fresh lemon wedge.
