Dill Salmon Patties with Green Onion
Pan-seared salmon patties made with wild-caught canned salmon, aromatic green onions, and fragrant fresh dill for a zesty, golden-brown finish.
INGREDIENTS
8 oz canned wild pink salmon
1 large egg
1 tbsp coconut flour
0.25 cup celery
2 stalks green onions
2 tbsp fresh dill
1 tbsp lemon juice
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp avocado oil
PREPARATION
Drain the canned salmon thoroughly and place it in a medium mixing bowl, flaking it with a fork into small pieces.
Finely dice the celery and thinly slice the green onions, then add them to the bowl with the salmon.
Add the chopped fresh dill, coconut flour, lemon juice, sea salt, and black pepper to the mixture.
In a small separate bowl, lightly whisk the egg and pour it over the salmon mixture, stirring until everything is well combined and holds together.
Divide the mixture into four equal portions and shape them into firm patties, about 1 inch thick.
Heat the avocado oil in a large non-stick skillet over medium heat until shimmering.
Carefully place the patties in the skillet and cook for 3 to 4 minutes per side, or until they are golden brown and heated through.
Serve immediately, optionally garnished with extra fresh dill or a squeeze of lemon.
