Pat the chicken breast dry and cut into bite-sized cubes. Season with sea salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, then remove from the pan and set aside.
In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent.
Stir in the minced garlic and grated ginger, cooking for 1 minute until fragrant.
Add the garam masala, turmeric, and cumin to the pan, stirring constantly for 30 seconds to toast the spices.
Pour in the tomato puree and chickpeas. Return the chicken and any accumulated juices back to the skillet.
Reduce heat to low and simmer for 10 minutes to allow the flavors to meld and the chicken to cook through.
Stir in the fresh spinach and cook just until wilted.
Garnish with fresh cilantro before serving.
