Garlic Herb Roasted Beef with Root Vegetables
Tender beef sirloin roasted with a fragrant garlic-herb rub, served alongside caramelized carrots and crisp green beans for a wholesome, savory dinner.
INGREDIENTS
6 oz Top sirloin roast
1 tbsp Olive oil
2 cloves Garlic
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Carrots
1 cup Green beans
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a small mixing bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, sea salt, and black pepper to create a paste.
Pat the beef roast dry with a paper towel and rub half of the garlic-herb paste evenly over the entire surface of the meat.
Place the beef in the center of the prepared baking sheet.
Toss the sliced carrots and trimmed green beans with the remaining garlic-herb paste until well coated, then arrange them in a single layer around the beef.
Roast in the oven for 20 to 25 minutes, or until the beef reaches an internal temperature of 135°F for medium-rare and the vegetables are tender.
Remove from the oven and let the beef rest for 5 to 10 minutes to lock in the juices before slicing thinly against the grain.
