Preheat your oven to 375°F (190°C).
Dice the chicken breast into small, bite-sized pieces and finely chop the red bell pepper and yellow onion.
In a small bowl, toss the chicken with the chili powder, ground cumin, sea salt, and black pepper until evenly coated.
Heat the extra virgin olive oil in a non-stick skillet over medium heat. Add the chicken, onions, and peppers, sautéing for 5-7 minutes until the chicken is cooked through and the vegetables are tender.
Cut the whole wheat tortilla into 1-inch strips or small triangles.
In a small individual-sized baking dish, spread a thin layer of salsa on the bottom. Layer half of the tortilla strips, followed by the chicken and vegetable mixture.
Top with the remaining tortilla strips and the rest of the salsa.
Sprinkle the shredded sharp cheddar cheese evenly over the top.
Bake for 12-15 minutes until the cheese is melted and bubbling and the edges of the tortilla strips are slightly crisp.
Remove from the oven and let cool for 2 minutes before serving.
