Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Dice the zucchini, red bell pepper, and yellow onion into uniform half-inch pieces to ensure even cooking.
Place the vegetables on the baking sheet, drizzle with half of the olive oil, and sprinkle with half of the sea salt and black pepper.
Roast the vegetables for 15-20 minutes, tossing halfway through, until they are tender and show golden-brown caramelized edges.
While the vegetables roast, heat the remaining olive oil in a large cast-iron skillet over medium-high heat.
Add the ground turkey to the skillet, breaking it apart with a wooden spoon, and season with garlic powder and dried oregano.
Cook the turkey for 7-9 minutes until browned and cooked through with no pink remaining.
Once the vegetables are done, transfer them from the baking sheet into the skillet with the turkey.
Toss everything together for 1-2 minutes to meld the flavors, then garnish with fresh chopped parsley before serving.
