Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served with buttery garlic mashed cauliflower and crisp-tender steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Wild Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
2 tsp Olive Oil
2 cloves Garlic
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10 to 12 minutes until very soft.
Add green beans to the steamer for the last 5 minutes of cooking until they are crisp-tender.
In a food processor or using a hand masher, blend the steamed cauliflower with minced garlic, one teaspoon of olive oil, and a pinch of salt until creamy.
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy.
Flip the salmon and cook for another 3 to 4 minutes until the center is just opaque.
Serve the seared salmon over a bed of the garlic mashed cauliflower with the steamed green beans on the side.
