Classic Baked Ziti with Ricotta
Oven-baked chickpea ziti tossed with lean ground turkey and zesty marinara, finished with a creamy dollop of ricotta and melted mozzarella.
INGREDIENTS
1.5 oz Chickpea ziti
5 oz 99% lean ground turkey
0.5 cup No-sugar-added marinara sauce
2 tbsp Part-skim ricotta cheese
1 tbsp Shredded part-skim mozzarella cheese
1 tsp Grated parmesan cheese
1 cup Fresh baby spinach
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Dried oregano
1 clove Garlic
PREPARATION
Preheat your oven to 375°F and prepare a small oven-safe baking dish.
Bring a pot of water to a boil and cook the chickpea ziti for 2 minutes less than the package instructions to keep it al dente.
In a skillet over medium heat, add the olive oil and sauté the minced garlic and ground turkey until the turkey is fully browned.
Stir the fresh baby spinach into the turkey until wilted, then pour in the marinara sauce, sea salt, black pepper, and dried oregano.
Drain the pasta and toss it directly into the skillet with the meat and sauce mixture until well combined.
Transfer the mixture to the baking dish, top with dollops of ricotta cheese, and sprinkle the mozzarella and parmesan over the top.
Bake for 15 to 20 minutes until the cheese is bubbly and the edges are slightly golden.
