Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon with crispy skin served alongside garlicky sautéed green beans and brown rice.
INGREDIENTS
7 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
1.5 cups Green Beans
1 tsp Avocado Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Pat the salmon dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is golden and crispy.
Flip the fillet and cook for another 2 to 3 minutes until the salmon is just opaque throughout.
Remove the salmon from the pan and set aside to rest while you add the trimmed green beans and minced garlic to the same skillet.
Sauté the beans for about 5 minutes, adding a splash of water if needed to steam them slightly until tender-crisp.
Serve the salmon and garlic green beans over the warm brown rice with a fresh squeeze of lemon juice.
