Savory Chicken Fried Rice
Sautéed chicken and day-old jasmine rice tossed with crisp vegetables and savory coconut aminos for a fragrant, protein-packed meal.
INGREDIENTS
5 oz Chicken breast
0.5 cup Cooked jasmine rice
1 large Egg
0.25 cup Green peas
0.25 cup Carrots
2 whole Green onions
1 tbsp Coconut aminos
0.5 tsp Avocado oil
0.5 tsp Toasted sesame oil
0.5 tsp Garlic powder
0.25 tsp Ginger powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Dice the chicken breast into bite-sized pieces and season evenly with sea salt, black pepper, garlic powder, and ginger powder.
Heat the avocado oil in a large skillet or wok over medium-high heat until it begins to shimmer.
Add the seasoned chicken to the skillet and sauté until golden brown and cooked through, approximately 5 to 7 minutes.
Add the diced carrots and frozen peas to the pan, stirring frequently for 3 minutes until the carrots begin to soften.
Push the chicken and vegetables to one side of the pan and crack the egg into the empty space, scrambling it until just set.
Stir in the cooked jasmine rice, breaking up any large clumps, and pour the coconut aminos and toasted sesame oil over the mixture.
Toss all ingredients together for 2 minutes until the rice is heated through and slightly crispy, then garnish with thinly sliced green onions.
