Grilled Paneer Skewers with Mixed Vegetable Stir-Fry
Paneer cubes and peppers marinated in spiced yogurt and grilled until charred, served with a crisp vegetable stir-fry and aromatic toasted cumin.
INGREDIENTS
120g Paneer cubes
100g Non-fat Greek Yogurt
100g Broccoli florets
50g Red Bell Pepper, cubed
30g Red Onion, cubed
1 tsp Olive Oil
1 tsp Ginger Garlic Paste
1 tsp Garam Masala
PREPARATION
In a medium bowl, whisk together the non-fat Greek yogurt, ginger garlic paste, garam masala, and a pinch of salt to create the marinade.
Toss the paneer cubes, half of the red bell peppers, and half of the red onions in the yogurt mixture until well coated. Let marinate for at least 15 minutes.
Thread the marinated paneer and vegetables onto skewers, alternating between cheese and veg.
Heat a grill pan or outdoor grill over medium-high heat and lightly coat with a tiny amount of oil spray if needed. Grill the skewers for 3-4 minutes per side until the paneer is golden and has visible char marks.
While the skewers are grilling, heat the olive oil in a large skillet over medium-high heat.
Add the broccoli and the remaining bell peppers and onions to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp and slightly browned.
Serve the hot paneer skewers over the bed of vegetable stir-fry and garnish with a squeeze of fresh lemon if desired.
