Cheesy Chicken and Pepper Quesadillas
Sautéed chicken breast and crisp bell peppers are folded into a toasted whole wheat tortilla with melted cheddar for a satisfying, savory crunch.
INGREDIENTS
5 oz Chicken breast
1 tsp Olive oil
0.5 cup Bell pepper
0.25 cup Red onion
0.25 tsp Chili powder
0.25 tsp Cumin
0.13 tsp Sea salt
0.13 tsp Black pepper
1 large Whole wheat tortilla
1 oz Sharp cheddar cheese
PREPARATION
Slice the chicken breast into thin strips and toss with chili powder, cumin, sea salt, and black pepper until evenly coated.
Heat the olive oil in a large non-stick skillet over medium-high heat.
Add the chicken to the skillet and sauté for 5-6 minutes until golden brown and cooked through.
Stir in the sliced bell peppers and red onions, cooking for another 3-4 minutes until the vegetables are tender but still retain a slight snap.
Transfer the chicken and vegetable mixture to a plate and wipe the skillet clean with a paper towel.
Place the whole wheat tortilla in the skillet over medium heat and sprinkle half of the shredded cheddar cheese over one half of the tortilla.
Top the cheese with the chicken and pepper mixture, then sprinkle the remaining cheese over the filling and fold the tortilla in half.
Cook for 2 minutes per side, pressing down gently with a spatula, until the tortilla is golden and the cheese is melted.
