Simmer the grits for 15-20 minutes, stirring occasionally, until the liquid is absorbed and the texture is creamy.
While grits cook, heat extra virgin olive oil in a large skillet over medium-high heat.
Add the diced bell pepper, onion, and celery to the skillet and sauté for 5 minutes until softened.
Toss the shrimp with Cajun seasoning and black pepper, then add them to the skillet.
Cook the shrimp for 2-3 minutes per side until they are pink, opaque, and slightly charred.
Once the grits are finished, remove from heat and stir in the grass-fed butter and Greek yogurt until fully incorporated.
Divide the creamy grits into a bowl and top with the Cajun shrimp and vegetable mixture.
Garnish with fresh chopped parsley before serving.
