Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with crisp-tender garlic green beans and nutty brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Minced Garlic
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4 to 5 minutes until the skin is crispy.
Flip the salmon and cook for another 3 to 4 minutes until the center is opaque and flakes easily.
In a separate skillet, heat the remaining olive oil over medium heat and sauté the minced garlic until fragrant.
Add the green beans and a tablespoon of water to the skillet, then cover and steam for 3 minutes.
Remove the lid and sauté the beans for 2 more minutes until they are crisp-tender.
Serve the seared salmon over a bed of warm brown rice with the garlic green beans on the side.
