Seared Salmon with Crispy Sweet Potato Wedges and Steamed Green Beans
Pan-seared salmon with a crispy skin served alongside roasted sweet potato wedges and tender green beans, finished with a bright squeeze of lemon.
INGREDIENTS
3.5 oz Wild Atlantic Salmon
200g Sweet Potato, cut into wedges
150g Fresh Green Beans
1 tbsp Avocado Oil
1 tbsp Fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the sweet potato wedges with half of the avocado oil and a pinch of sea salt, then spread them in a single layer on the baking sheet.
Roast the sweet potatoes for 25-30 minutes, flipping halfway through, until they are golden and crispy.
While the potatoes roast, place the green beans in a steamer basket over boiling water and steam for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining avocado oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the hot pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Plate the seared salmon alongside the sweet potato wedges and steamed green beans, then drizzle everything with fresh lemon juice before serving.
