1.5 cups Riced Cauliflower
1 cup Sugar Snap Peas

PREPARATION
Pat the salmon fillet completely dry with paper towels and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon carefully and cook for another 2-3 minutes until cooked through to your preference, then remove from the pan and set aside.
In the same skillet, add the remaining olive oil along with the riced cauliflower and snap peas.
Sauté the vegetables for 4-5 minutes until the cauliflower is tender and the snap peas are bright green and crisp-tender.
