Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6 ounces Salmon Fillet
1.5 cups Cauliflower Florets
2 tablespoons Nonfat Plain Greek Yogurt
1 cup Fresh Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
While cauliflower steams, trim the green beans and mince the garlic.
Transfer steamed cauliflower to a food processor or bowl; add Greek yogurt, salt, and pepper, then blend or mash until smooth and creamy.
Heat half of the olive oil in a non-stick skillet over medium-high heat. Season salmon with salt and pepper, then sear for 4-5 minutes per side until golden and cooked through.
Remove salmon from the pan and add the remaining oil, green beans, and a splash of water. Cover and cook for 3 minutes.
Remove the lid, add the minced garlic to the beans, and sauté for another 1-2 minutes until the beans are tender-crisp and fragrant.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
