Cajun Chicken Alfredo Pasta
Pan-seared Cajun chicken strips tossed with chickpea pasta in a velvety, protein-packed yogurt sauce that delivers a satisfyingly spicy kick.
INGREDIENTS
4 oz Chicken breast
1 oz Chickpea penne pasta
0.5 tsp Olive oil
0.5 cup Red bell pepper
0.25 cup Yellow onion
0.13 cup Plain Greek yogurt
1 tbsp Parmesan cheese
1 tsp Cajun seasoning
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Bring a pot of salted water to a boil and cook the chickpea pasta according to package directions. Reserve 0.25 cup of the pasta water before draining.
Slice the chicken breast into thin strips and season evenly with Cajun seasoning, sea salt, and black pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown and cooked through, about 5-6 minutes.
Remove chicken from the skillet and set aside. In the same skillet, add the diced bell pepper and onion, sautéing until softened and slightly charred.
In a small bowl, whisk together the Greek yogurt, parmesan cheese, garlic powder, and the reserved pasta water until smooth.
Reduce the skillet heat to low. Return the chicken and cooked pasta to the pan with the vegetables.
Pour the yogurt mixture over the pasta and toss gently until the sauce is creamy and coats all ingredients evenly.
Garnish with freshly chopped parsley and serve immediately.
