PREPARATION
Preheat your oven to 425°F (220°C).
Pat the chicken completely dry with paper towels to ensure the skin gets crispy.
Chop the carrots, parsnips, and red onion into 2-inch chunks and place them in a large roasting pan.
Toss the vegetables with 1 tablespoon of olive oil, half the salt, and half the pepper.
Halve the lemon and the garlic head, then stuff them into the chicken cavity along with half of the rosemary and thyme.
Rub the exterior of the chicken with the remaining tablespoon of olive oil, salt, pepper, and the rest of the chopped herbs.
Place the chicken on top of the vegetables and roast for 60 to 75 minutes, or until the internal temperature reaches 165°F.
