Sauté the diced onion and red bell pepper in a non-stick skillet over medium heat until they are soft and translucent.
Stir the cooked shredded chicken, rinsed black beans, cumin, garlic powder, sea salt, and black pepper into the skillet until well combined.
Slice the corn tortilla into one-inch wide strips.
In a small oven-safe baking dish, spread two tablespoons of the red enchilada sauce across the bottom.
Layer half of the tortilla strips over the sauce, followed by the chicken and bean mixture.
Top with the remaining tortilla strips, the rest of the enchilada sauce, and the shredded cheddar cheese.
Bake for 15 to 20 minutes until the cheese is bubbly and the edges of the tortillas are slightly crisp.
Remove from the oven and garnish with freshly chopped cilantro before serving.
