Ground Beef Skillet with Roasted Vegetables
Sautéed lean ground beef combined with oven-roasted carrots and peppers, topped with creamy melted mozzarella di bufala for a savory finish.
INGREDIENTS
8 oz Ground beef (5% fat)
1 cup Red bell pepper
0.5 cup Carrots
0.5 cup Cherry tomatoes
1 oz Mozzarella di bufala
1 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
1 tsp Dried oregano
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the sliced carrots and chopped red bell peppers with olive oil, sea salt, and black pepper on the prepared baking sheet.
Roast the vegetables for 15 minutes, then add the cherry tomatoes to the pan and roast for another 5-7 minutes until the tomatoes are blistered.
While the vegetables are roasting, heat a large non-stick skillet over medium-high heat.
Add the ground beef to the skillet, seasoning it with garlic powder and dried oregano.
Cook the beef for 6-8 minutes, breaking it into small crumbles with a spatula, until it is fully browned and cooked through.
Once the vegetables are finished, stir them directly into the skillet with the beef to incorporate the juices.
Tear the mozzarella di bufala into small pieces and scatter them over the beef and vegetable mixture.
Cover the skillet with a lid for 1 minute to allow the cheese to soften and melt before serving.
