Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared wild salmon served over a bed of buttery garlic mashed cauliflower and tender asparagus, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
2 cups Cauliflower florets
10 Asparagus spears
2 tsp Ghee
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
Sea salt and black pepper to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
While cauliflower cooks, steam the asparagus spears for 4-5 minutes until tender-crisp and bright green, then set aside.
Drain the cauliflower well and transfer to a food processor or bowl; blend with ghee, minced garlic, and a pinch of sea salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Plate the garlic mashed cauliflower first, top with the seared salmon, and serve the asparagus on the side.
Drizzle the entire dish with fresh lemon juice before serving.
