Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Wild salmon fillet pan-seared until golden, paired with a velvety garlic cauliflower mash and crisp-tender green beans for a bright, citrusy finish.
INGREDIENTS
6.5 oz Wild Salmon Fillet
200g Cauliflower Florets
100g Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Greek Yogurt
2 cloves Fresh Garlic
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets until they are very tender when pierced with a fork.
Transfer the steamed cauliflower to a food processor with the Greek yogurt and half of the minced garlic, blending until smooth and creamy.
Heat half of the olive oil in a skillet over medium heat and sauté the green beans with the remaining garlic until they are bright green and crisp-tender.
Season the salmon fillet with salt and pepper, then sear in the remaining olive oil over medium-high heat for about 4-5 minutes per side until the skin is crispy.
Plate the salmon over a generous bed of cauliflower mash and serve with the garlic green beans and a squeeze of fresh lemon juice.
