Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with tender-crisp green beans and creamy garlic-infused cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tbsp Non-fat Greek Yogurt
2 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer for the last 5 minutes of cooking until they are tender-crisp and bright green.
While vegetables steam, pat the salmon dry with a paper towel and season with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes.
Flip the salmon and cook for another 3-4 minutes until the skin is crispy and the fish is cooked through.
Transfer the steamed cauliflower to a food processor or bowl; add the Greek yogurt, ghee, and minced garlic.
Blend or mash the cauliflower until smooth and creamy, then season to taste.
Serve the seared salmon alongside the garlic mash and steamed green beans.
