Baked Cinnamon Apples with Oat Crumble
Tender apples baked with aromatic cinnamon and a crunchy oat-walnut crumble, served over a thick bed of creamy, protein-rich Greek yogurt.
INGREDIENTS
1 cups Nonfat Greek yogurt
1 medium Apple
0.25 cup Rolled oats
1 tbsp Chopped walnuts
1 tbsp Hemp seeds
1 tsp Maple syrup
0.5 tsp Ground cinnamon
0.25 tsp Vanilla extract
1 pinch Sea salt
PREPARATION
Preheat your oven to 375°F (190°C).
Core and dice the apple into half-inch cubes, leaving the skin on for extra fiber.
Place the apple pieces into a small oven-safe ramekin or baking dish and toss with 0.25 tsp of the ground cinnamon.
In a separate small bowl, stir together the rolled oats, chopped walnuts, hemp seeds, maple syrup, sea salt, and the remaining 0.25 tsp of cinnamon until well combined.
Spoon the oat and nut mixture evenly over the top of the apples.
Bake for 18 to 22 minutes until the apples are soft and the oat crumble is toasted and golden brown.
While the apples bake, whisk the vanilla extract into the Greek yogurt in a serving bowl.
Remove the apples from the oven and spoon the warm crumble directly over the cold yogurt to serve.
