Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic cauliflower mash with a side of crisp-tender green beans and a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Sockeye Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
Sea salt and black pepper to taste
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or bowl, add half of the olive oil and a pinch of salt, then blend or mash until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Serve the seared salmon over the garlic cauliflower mash with the green beans on the side, finishing with an optional squeeze of fresh lemon juice.
