Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of bright lemon and a buttery ghee glaze.
INGREDIENTS
8 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower florets
1 cup Fresh Green Beans
1 tsp Olive Oil
1 tsp Ghee
1 tbsp Nutritional Yeast
2 cloves Garlic, minced
1/2 Lemon, juiced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
Transfer the steamed cauliflower to a blender or food processor, add the ghee and nutritional yeast, and blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat olive oil in a large non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan and set aside.
In the same skillet, add the green beans and minced garlic, sautéing for 3-5 minutes until the beans are crisp-tender and the garlic is fragrant.
Plate the cauliflower mash, top with the seared salmon and green beans, and finish with a fresh squeeze of lemon juice.
