4 oz Chicken breast
1.5 oz Chickpea pasta
2 tbsp Non-fat Greek yogurt
1 tbsp Parmesan cheese
1 tsp Olive oil
2 cloves Garlic
1 cup Fresh baby spinach
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh parsley
PREPARATION
Bring a pot of salted water to a boil and cook the chickpea pasta according to package directions, reserving 2 tablespoons of pasta water before draining.
While the pasta cooks, season the chicken breast with sea salt and black pepper.
Heat olive oil in a skillet over medium heat and sauté the chicken until golden and cooked through, approximately 5-6 minutes per side.
Add the minced garlic to the skillet with the chicken and cook for 30 seconds until fragrant.
Reduce the heat to low and add the cooked pasta, Greek yogurt, parmesan cheese, and the reserved pasta water to the skillet.
Tir gently to combine until the sauce becomes smooth and coats the pasta.
Fold in the fresh baby spinach and stir until just wilted.
