130g Sweet Potato, cubed
100g Fresh Green Beans
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until fork-tender.
Drain the potatoes and mash them thoroughly with the Greek yogurt and a pinch of sea salt until smooth.
Heat half of the olive oil in a skillet over medium heat and sauté the green beans with minced garlic for 5-7 minutes until tender-crisp.
Season the salmon fillet with salt and pepper.
In a separate non-stick skillet, heat the remaining oil over medium-high heat.
Place the salmon skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
