Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned and fully cooked through.
Stir in the diced red bell pepper, garlic powder, and black pepper, sautéing for about 3-4 minutes until the peppers soften.
Add the baby spinach to the skillet and stir for 1 minute until just wilted.
Fold the roasted sweet potatoes into the beef mixture, then divide into bowls and serve warm.
