PREPARATION
Preheat your oven to 400°F (200°C).
Dice the eggplant, zucchini, and red bell pepper into uniform half-inch cubes.
On a large parchment-lined baking sheet, toss the diced vegetables with half of the olive oil, sea salt, and black pepper.
Season the chicken breast with the remaining olive oil, Herbes de Provence, and a pinch of salt and pepper.
Place the chicken on the same baking sheet as the vegetables and roast for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
