2 whole Lobster tails
1.5 tbsp Ghee
2 cloves Garlic
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Smoked paprika
1 tbsp Fresh parsley
1 tsp Lemon juice
1 cup Asparagus spears
0.5 cup Cooked quinoa
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Butterfly the lobster tails by using kitchen shears to cut down the center of the top shell toward the tail, then gently pry the shell open and lift the meat to rest on top of the shell.
In a small bowl, melt the ghee and whisk in the minced garlic, lemon juice, smoked paprika, and a pinch of the sea salt and pepper.
Place the lobster tails and the trimmed asparagus spears on the prepared baking sheet.
Brush the garlic ghee mixture generously over the lobster meat and lightly coat the asparagus, seasoning the vegetables with the remaining salt and pepper.
Roast in the oven for 12 to 15 minutes, or until the lobster meat is opaque and firm and the asparagus is tender-crisp.
