PREPARATION
Preheat your oven to 400°F (200°C).
Peel and cube the sweet potato into 1-inch pieces, then toss with half of the olive oil and a pinch of salt on a parchment-lined baking sheet.
Roast the sweet potatoes for 15 minutes.
Add the trimmed green beans to the baking sheet, tossing them with the sweet potatoes, and roast for an additional 10-12 minutes until the vegetables are tender.
