Preheat your oven to 400°F and line a small baking sheet with parchment paper.
In a shallow bowl, whisk the egg until smooth. In a second shallow bowl, combine the almond flour, parmesan cheese, oregano, garlic powder, sea salt, and black pepper.
Dip the chicken breast into the egg wash, letting any excess drip off, then press it firmly into the almond flour mixture until fully coated on both sides.
Place the breaded chicken on the prepared baking sheet and drizzle or spray with olive oil to help it crisp up.
Bake for 15 minutes, then remove from the oven and spoon the marinara sauce over the center of the chicken, followed by the mozzarella cheese.
Return to the oven for another 5-7 minutes until the chicken is cooked through and the cheese is bubbly and slightly browned.
While the chicken finishes, lightly sauté the zucchini noodles in a pan for 2-3 minutes until just tender.
Serve the hot chicken parmesan over the zucchini noodles and enjoy immediately.
