Buttermilk Fried Chicken with Fluffy Biscuits
Tender chicken breast air-fried in a crispy almond-buttermilk crust served alongside a warm, fluffy whole wheat biscuit for a comforting crunch.
INGREDIENTS
5 oz Chicken breast
0.25 cup Low-fat buttermilk
0.13 cup Almond flour
0.5 tsp Smoked paprika
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 medium Whole wheat biscuit
0.25 tsp Avocado oil
PREPARATION
Slice the chicken breast into even strips or nuggets.
Place the chicken in a shallow bowl and pour the buttermilk over it, letting it soak for 10 minutes.
In a separate shallow dish, whisk together the almond flour, smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
Remove each chicken piece from the buttermilk, letting the excess drip off, then dredge thoroughly in the seasoned almond flour mixture.
Lightly spray the air fryer basket with avocado oil and arrange the chicken in a single layer.
Spray the tops of the chicken with the remaining avocado oil and air-fry at 400°F for 12-15 minutes, flipping halfway through, until golden brown.
Warm the whole wheat biscuit in the air fryer or oven during the last 2 minutes of cooking.
Serve the crispy chicken strips immediately alongside the warm biscuit.
