Reduce heat to low, cover, and simmer for 20-25 minutes until the lentils are tender but still hold their shape.
While lentils cook, heat the coconut oil in a small skillet over medium heat.
Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
Stir in the turmeric, cumin, sea salt, and black pepper, toasting the spices for 30 seconds.
Once the lentils are cooked, drain any excess water and return them to the pot.
Stir the spiced oil mixture, coconut milk, and nutritional yeast into the lentils.
Simmer the mixture for 5 minutes on low heat to allow the flavors to meld and the sauce to thicken.
Serve the coconut lentils over the warm basmati rice.
Top each serving with a generous dollop of Greek yogurt and stir slightly before eating.
