Beef and Rice Stuffed Bell Peppers
Lean ground beef and brown rice simmered with aromatic herbs and stuffed into vibrant bell peppers then baked until the filling is savory and tender.
INGREDIENTS
6.5 oz Ground beef (93% lean)
0.25 cup Cooked brown rice
2 medium Bell peppers
0.25 cup Tomato puree
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Dried oregano
1 tbsp Parmesan cheese
PREPARATION
Preheat oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
In a large skillet over medium heat, add the olive oil and sauté the diced onion and minced garlic until translucent and fragrant.
Add the ground beef to the skillet, breaking it apart with a spoon, and cook until fully browned; drain any excess fat if necessary.
Stir in the cooked brown rice, tomato puree, sea salt, black pepper, and dried oregano, allowing the flavors to meld for 2 minutes.
Stand the bell peppers upright in a baking dish and spoon the beef and rice mixture into each cavity until tightly packed.
Sprinkle the tops with parmesan cheese, cover the dish with foil, and bake for 30 minutes.
Remove the foil and bake for an additional 10 minutes until the peppers are soft and the cheese is lightly golden.
