Remove the steak from the refrigerator 20 minutes before cooking to reach room temperature and pat dry thoroughly with a paper towel.
Season both sides of the steak generously with the sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the avocado oil.
Once the pan is shimmering, place the steak in the skillet and sear for 3-4 minutes per side for medium-rare, or until your desired doneness is reached.
In the final 2 minutes of cooking, add the ghee, smashed garlic clove, rosemary, and thyme to the pan.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melted herb-infused ghee.
Remove the steak from the pan and let it rest on a cutting board for at least 5-10 minutes to lock in the juices.
While the steak rests, toss the asparagus into the remaining pan juices and sauté for 3-5 minutes until tender-crisp.
Slice the steak against the grain and serve immediately alongside the sautéed asparagus.
